Delicious mac and cheese using smoked gouda, white cheddar and truffle oil. The perfect side dish.

Ingredients

elbow pasta
, cooked according to box al dente

tablespoons
unsalted butter

tablespoons
flour

cups
milk
2
teaspoons
truffle oil/pate
1
cup
white cheddar
, shredded
1/2
cup
aged gouda
, shredded
kosher salt & freshly ground pepper
Instructions
In a large, heavy bottom saucepan, melt the butter. over low heat. Whisk in the flour until a paste forms (
roux
).
Continue to cook on medium heat until the paste turns a light brown.
Whisk in the milk until smooth. Add the truffle oil/pate.
Whisk in the shredded cheeses until smooth.
Using a pasta spoon, toss the cooked pasta with the cheese sauce.
Test for seasoning and then add Kosher salt or cracked pepper sparingly. This will vary based on how salty your cheese was.
For serving, drizzle with another dab of truffle oil or top with pea shoots (pictured).
