Spicy Thai Chicken Pizza uses a rich peanut satay sauce with shredded chicken, colorful vegetables and topped with sweet honey roasted peanuts and spicy chili oil.
Combine the ½ cup creamy peanut butter, 2 tablespoons low sodium soy sauce, grated or minced 1 tablespoon fresh ginger, grated or minced 1 clove fresh garlic, 1 tablespoon fresh lime juice and 2 teaspoons light brown sugar in a small food processor or a small bowl and whisk together. Set aside.
Thai Chicken Pizza:
On a preheated pizza stone, par-cook the 1 can refrigerated pizza crust according to package directions. Remove and allow to cook slightly before topping. Keep the oven on.
Spread the peanut satay sauce evenly over pizza crust. Top with the shredded and cooked ½ cup chicken, chopped 2 tablespoons roasted red pepper, chopped 2 tablespoons red onion, shredded 2 tablespoons carrot and chopped 2 tablespoons celery. Bake for 10 minutes, or until top is golden brown.
Remove and evenly sprinkle the chopped 1 tablespoon scallions, 1 tablespoon cilantro and 1 tablespoon roasted peanuts over the pizza.
Drizzle with Chinese Chili Oil and spritz with the Fresh lime wedges.
