EASY Quiche Florentine Egg Muffins are packed with spinach, garlic & cheese and are a quick easy way to make quiche you can grab on the go!

heavy cream or whole milk

fresh spinach

garlic

white cheddar
, shredded

parmesan cheese
, shredded

teaspoon
coarse Kosher salt

teaspoon
ground black pepper
Instructions
Preheat the oven to 350 degrees and prepare a muffin pan with a light coating of cooking spray.
In a large bowl, beat the 12 eggs with an electric mixer on medium speed until fully broken and slightly frothy.
Add the cream and mix just until fully combined.
Place the spinach and garlic in a small bowl and microwave for one minute or until fragrant and wilted. Wring well with tea towel or paper towels.
Add the spinach to the egg mixture along with the shredded white cheddar, parmesan cheese, salt and pepper. Stir until fully incorporated.
Evenly distribute the egg mixture into prepared muffin cups.
Bake in a preheated oven for 15 minutes or until the tops are set and the edges are slightly golden brown.
Serve warm with extra Parmesan cheese on top.
