Preheat the oven to 350°F. Heat the oil in a large, oven safe (preferably cast iron) skillet.
Add the hash browns and onion, cooking according to the package directions, minus 3 minutes.
Sprinkle with the salt and toss. Using the back of a spoon, create 3-4 wells and crack the eggs into each one. Equally divide the BBQ pulled pork in dollops around eggs. Transfer the whole dish to the oven.
Bake until the egg whites are opaque, but yolks are still shiny and runny, approximately 5-8 minutes.
Top with the cheese and return to oven until melted. approximately 1 minutes.
Remove, garnish with the scallions and serve!
