To assemble the salad, place the lettuce on a large serving platter or evenly divide between 4-5 individual plates. Top with the sliced peaches, blueberries, crumbled cheese of your choice, shallot and candied walnuts. Set aside.
In an airtight container with a tight lid or in a small mixing bowl, vigorously whisk or shake together the champagne vinegar, peach preserves, mustard, olive oil and salt.
Wait to dress the salad until you are ready to serve.
