In a heavy bottom saucepan over medium heat, combine the blueberries, sugar and water. Stir every few minutes with a wooden spoon until mixture has turned into a bright blue syrup, but thin.
Reduce the heat to low and whisk in the heavy cream, butter and vanilla. The mixture will start to thicken.
Stir in a dash of the fine sea salt and allow to cool for 5-10 minutes before serving. Mixture will thicken even more while cooling.
