This Healthy Cabbage Soup is based off from the Weightloss Wonder Soup and is full of nothing but veggies for healthy vegetable soup that may even help you lose a few pounds!
In a large stock pot or Dutch oven, bring the 8 cups low sodium vegetable broth to a rapid boil and then add the sliced 1 cup carrots, sliced 1 cup parsnips and chopped 1 cup celery and optionally, the 2 tablespoons tomato paste.
Boil until soft, approximately 10 minutes.
Add the cut 1/2 head cabbage, minced or pressed 1 clove garlic , chopped 1/2 cup white onion14.5 ounces canned petite tomatoes2 tablespoons lemon juice and 1/4 teaspoon chili powder. Continue to cook over low heat until the cabbage just starts to soften, approximately 5 minutes.
Season to taste with Salt and Pepper. Serve.
