Ingredients
These simple ingredients are all easy to find at your local grocery store. You probably already have some of them in your refrigerator or pantry.
- Chicken breasts – I prefer to use boneless skinless chicken breasts. I also like to pound them to an even thickness for even cooking.
- Salt and pepper – I like to use a simple blend or coarse sea salt and freshly ground black pepper. Keep in mind that different salts measure differently.
- Extra virgin olive oil – This is what we use to sauté the chicken. It helps prevent the chicken from sticking to the pan.
- Shallot – In the onion family, a thinly sliced shallot adds a lot of flavor to this savory sauce.
- Fresh garlic – I always measure garlic with my heart. And I always prefer to use fresh garlic rather than the pre-minced jarred version.
- White wine – When you cook with white wine, you cook the alcohol off. If you prefer, you can use low sodium chicken broth instead.
- Unsalted butter – I always use unsalted butter when cooking. That way you’re able to control the amount of salt in a recipe.
- Mustard – I used a combination of both Dijon mustard (hence the name,) and coarse whole grain mustard. Yellow mustard makes for more of a tangy sauce, so I leave that out.
- Fresh thyme leaves – Whenever I’m making a creamy dish like this, fresh herbs add such a nice touch.
- Worcestershire sauce – The hardest word to pronounce is one of my most used ingredients. So much flavor and delicious when added to this sauce.
- Heavy cream – This will be the base of our creamy sauce. Some creamy sauces use sour cream, but I like a thinner sauce so I use heavy cream.
Variations
There are plenty of ways you can make this chicken dijon your own! Here are a few suggestions.
- Chicken – You can use different chicken pieces. Skinless chicken thighs, a whole chicken or even pork chops would work great with this recipe. Make sure to change the cook time accordingly.
- Fresh herbs – In addition to or instead of the thyme, you can also use herbs like rosemary or a bay leaf for extra flavor.
- Seasonings – While this dish is already quite flavorful, you could add things like garlic powder, onion powder, lemon juice, italian seasonings or white pepper for even more flavor.
How to Make Chicken Dijon
You are going to love how easy this family favorite is to make.
- Prepare chicken. Butterfly both chicken breasts and then tenderize them using the flat size of a meat mallet to make them a uniform thickness. Season both sides of the chicken with salt and pepper.
- Sear chicken. Heat a large skillet over medium heat. Add the olive oil, heating and then adding the chicken breasts. Sear on both sides until golden brown. Remove to a paper towel lined plate.
- Sauté shallot and garlic. Without wiping out the skillet, add the shallot and garlic, sauteing for one minute.
- Deglaze with wine. Deglaze the pan with the white wine (or chicken stock), scraping up the browned bits with a spoon.
- Add remaining sauce ingredients. Stir in the butter, Dijon mustard, whole grain mustard, fresh thyme and Worcestershire sauce. Allow to simmer, then stir in the cream.
- Add chicken to sauce. Return the chicken breasts to the skillet, spooning the sauce over top, simmer on low for a few minutes. Sauce will reduce, but not be super thick.
What to Serve with Chicken Dijon
You can serve this easy chicken recipe with any of your favorite side dishes. Some of our favorites are creamy mashed potatoes, egg noodles or roasted sweet potatoes.
I also like to serve with some sort of vegetable. A nice side salad, broccoli or green beans are great options.

You can store any leftover chicken in an airtight container. It will stay for up to five days in the refrigerator.
Can I Freeze Chicken Dijon?
You sure can! You can freeze the chicken for up to three months. Do this in an airtight container as well.
