No Bake Christmas Cookies
Surprise…I’ve come up with another no bake cookie recipe! I know, I know, this is like the 4th one this month but I’ve gotta say, I’m having a lot of fun experimenting with easy Christmas cookies that don’t require hovering over the oven.
Don’t get me wrong, I love baking Christmas cookies and spend a few months of the year dreaming up new Christmas cookie ideas. Chocolate chip cookies, sugar cookies, peanut bottom blossoms…all of the traditional Christmas cookie recipes get made in my house.
But sometimes, especially now that my baking time is often reduced to nap time, easy Christmas cookies that can be made in just a few minutes are all I have time for.
Sugar Wafers
And the secret weapon are sugar wafers. I loved these as a kid and don’t have them nearly frequently enough as an adult. Crispy wafer cookies sandwiched with creme filling, a delicate sweet treat. The old school packages came with a chocolate, vanilla and strawberry flavors, but now you can buy all one flavor. I loved the chocolate and vanilla, but the pinks ones got left behind. I feel like we all had a favorite.
These Chocolate Covered Sugar Wafer Cookies are quick and easy (I can make a batch in under 20 minutes!) but I’ve gotta say, they look pretty dang cute and festive!
Plus, they’re tasty and all but melt in your mouth, like all sugar wafer cookies, but with chocolate. And sprinkles.
Kid Friendly
If you’re baking with kids, no bake cookies like these Chocolate Covered Sugar Wafer Cookies are a great option.
Kids LOVE decorating with sprinkles and they can even help dip the cookies in the chocolate with no risk of them touching a hot oven.
And, let’s be real, kids always get bored after the first 10 minutes of cookie making but these easy Christmas cookies are quick enough they can help with the whole process.
While I came up with these as a Christmas cookie idea, you could easily change out the sprinkles to make these appropriate for any other holiday, like pink and red for Valentine’s Day or black and orange for Halloween.

Santa Cookies
Chocolate Covered Sugar Wafers
Ingredients
- 20 sugar wafer cookies
- 4 ounces almond bark*
- festive sprinkles
Instructions
- Line a rimmed baking sheet with parchment paper.
- Melt almond bark according to package directions.
- Dip 1/3 of sugar wafer cookie into melted chocolate.
- Set on parchment paper and immediately sprinkle with your choice of sprinkles.
- Allow to set before storing.
