Who doesn’t love chocolate for dessert?

Recently, I’ve been loving things like this skillet brownie recipe that are incredibly simple but wonderfully flavorful. Also, it calls for one of my favorite cookies.

  • It’s a no bowl recipe! You can make the brownies IN the skillet, then pop them into the oven for their bake. (Please note that my photos show this in a bowl because I wanted it to be more visible.)

Also, I just love how impressive this oreo brownie skillet looks on the table but how simple it is to put together when you’ve got the ingredients.

Once the brownie comes out of the oven, all you’ve got to do is serve. Either top ‘em with your favorite toppings—ice cream, whipped cream, chocolate sauce, maraschino cherries and more—or let guests scoop their own serving and opt for their favorite accouterments.

Either way, it’s a HUGE win and it’s a fun experience for everyone enjoying it.

Oreo Brownie Skillet Ingredients

This recipe call for several baking staples. Chances are, you’ve got several of them already in your pantry!

  • Salted butter—this is the fat that’s going to serve as the base for our brownie. I like to use butter in brownies because it provides more flavor. 
  • Chocolate bars—we’re using a combination of bittersweet bars and semisweet.
  • Granulated sugar—also known as white sugar, this provides sweetness to the brownie batter. I do not suggest substituting something else for this.
  • Eggs—these provide structure, as well some rise for our brownie skillet.
  • Vanilla extract—a little goes a long way! Be sure to use the real deal, not the imitation kind.
  • All-purpose flour—this is sometimes referred to as AP flour. I have not tested this recipe using other flours and do not recommend making that swap.
  • Salt—I like to use a fine grain sea salt in baking recipes like this one.
  • Oreos—chop them roughly with a knife so that they have some texture. We’ll want a few extra to crumble over the skillet before we serve it, too.
  • Chocolate chips—I used semisweet chocolate chips in my oreo brownie skillet, but you can use milk chocolate chips or even dark chocolate chips if that’s your favorite.

Toppings

The beauty in a one-pan dessert like this one is you can just add the toppings straight into the skillet… or you can let your guests add their own to their servings.

Here are some ideas for what you can have to top them with:

  • Ice cream
  • Sweetened whipped cream 
  • Hot fudge sauce
  • Caramel sauce
  • Crushed Oreo cookies
  • Chocolate chips
  • Sprinkles
  • Nuts, like chopped pecans or walnuts
  • Maraschino cherries

How to Make Oreo Brownie Skillet

  1. Choose your skillet. I like a high-sided cast iron skillet. Make sure you’ve got something that is oven safe! You may also mix the brownies in a bowl and then pour them into the skillet as I have done in these photos.
  2. Preheat the oven.
  3. Melt the butter in the skillet on the stovetop over medium heat. When the butter has melted, turn down the heat to low.
  4. Add the chopped chocolate bars, stirring until melted. Keep stirring so the chocolate does not burn. Remove from the heat once melted.
  5. Stir in the sugar, mixing with a rubber spatula until combined. Let this cool 5-10 minutes so that it does not cook the eggs.
  6. Break the eggs into a separate bowl. Measure in the vanilla, and whisk until combined.
  7. Temper the egg mixture with a spoonful of the chocolate mixture. Once you add the chocolate, stir vigorously to combine and warm up the eggs.
  8. Pour the egg-vanilla mixture into the oreo brownie skillet, stirring vigorously to incorporate all the wet ingredients. 
  9. Add the flour, salt, chopped Oreos and chocolate chips to the skillet, stirring until just combined.
  10. Transfer the skillet to the preheated oven, and bake for 20-30 minutes or until cooked through. (If you’re a fan of gooey brownies, check this around the 18-minute mark.)
  11. Serve with your favorite toppings, and enjoy warm straight out of the oven!

Storage and Freezing

Storage: If you’ve got leftover oreo brownie skillet, you’re in for a treat! Transfer the leftovers into an airtight container and store in the fridge for up to 5 days.

Reheating: Reheat individual portions in 30-second increments in the microwave until warmed through.

  • Preheat oven to 350°F. Choose a high-sided oven-safe skillet to bake your brownies in and spritz with nonstick baking spray. (I used a 8” cast iron skillet.)
  • Melt the butter in the skillet over medium heat on the stovetop. You may also do this in a bowl in the microwave.
  • When melted, turn down the heat to low.
  • Stir in the chopped chocolate, stirring constantly until completely melted.
  • Turn off the heat. Measure in the sugar, stirring with a rubber spatula until combined. Let cool for 5-10 minutes.
  • Break the eggs in a separate bowl. Measure the vanilla into the bowl with them. Whisk with a whisk or a fork until combined.
  • Temper the egg mixture with a spoonful of the chocolate mixture, stirring vigorously to combine and warm up the eggs to where they do not scramble in the brownie mixture.
  • Pour the egg-vanilla mixture into the skillet, stirring vigorously to incorporate all the wet ingredients.
  • Add the flour and salt to the skillet, stirring until just combined.
  • Next, add the chopped Oreos and chocolate chips and fold to incorporate into the batter.
  • Transfer the skillet to the preheated oven, and bake for 30-35 minutes or until cooked through. (If you’re a fan of gooey brownies, check this around the 25-minute point.)
  • Top with your favorite garnishes, and enjoy warm straight out of the oven!
