Ingredients

You will easily be able to find all of these fresh peach pizza ingredients at your local grocery store.

  • Pizza crust – If you have a favorite homemade pizza crust, please use that. My grocery store also sells fresh pizza dough, but I just used a pre-made pizza crust for mine.
  • Extra virgin olive oil – I like to use a good quality olive oil here. If you want to take the flavor up a notch, you can use a garlic oil or other flavored oil.
  • Fresh mozzarella cheese – I like to shred my own cheese. Pre-shredded cheese has an additive that keeps it from sticking together, but also prevents it from melting properly.
  • Gorgonzola cheese – Gorgonzola is actually in the blue cheese family and has a similar appearance with a green-blue mold spread over the cheese. It has a very salty and crumbly taste as opposed to a salty and strong flavor from blue cheese.
  • Shallots – a part of the onion family, shallots are slightly sweeter and less pungent than red and yellow onions. 
  • Peaches – You want these juicy peaches to be thinly sliced and pitted. Use more or less depending on the size of the peach and your crust.
  • Balsamic reduction sauce – You can make homemade balsamic reduction or but some at the store. A drizzle of balsamic glaze is the best part! 
  • Fresh arugula – I like to add both color and flavor to make the perfect pizza. Arugula does just that.

Variations

There are plenty of ways for you to make this peach pizza recipe your own. Here are a few suggestions.

  • Cheese – Instead of gorgonzola, you can use any cheese you’d like. Goat cheese, feta cheese, burrata cheese or ricotta cheese are all great options.
  • Spice it up – You can add some spice to this pizza by using a spicy pepper oil or sprinkling some chili flakes right on top.
  • Meat – I love a good prosciutto pizza instead of a traditional pepperoni pizza. The salty prosciutto pairs perfectly with the sweetness of the peaches.
  • Fresh herbs – You can take the flavor of this perfect summer pizza up a notch with herbs. Fresh basil over the entire pizza would be a great addition.
  • Vegetables – If you’d like to add more vegetables, tray adding things like red onion or tomatoes.

How to Make Peach Pizza

Pizza nights just got better with these easy to make summer peach pizzas. 

  1. Prepare oven and pizza pan. Preheat oven and pizza stone or pizza baking sheet.
  2. Add oil. Brush extra virgin olive oil evenly over crust to create a barrier and prevent cheeses from sogging up the crust. This is what we use in place of actual pizza sauce. 
  3. Top with cheese. Sprinkle mozzarella, shallots and Gorgonzola evenly over crust. 
  4. Add peaches. Top with peach slices in whatever pattern or non-pattern you desire.
  5. Bake until crust is golden brown and cheese is bubbly.
  6. Drizzle with balsamic. Remove pizza and immediately drizzle balsamic reduction sauce evenly. 
  7. Top with arugula. Place a fresh arugula in the center of the pizza, slice and serve.

Tips for Homemade Pizza

I am a firm believer that pizza is the best type of food. So now is the perfect time to share some of my homemade pizza tips with you!

  • Pizza stone – Use a pizza stone and make sure you preheat it in the oven. The stone will get rid of some of the moisture, making sure your pizza crust is nice and crispy. 
  • Cornmeal – Dust the pan or the pizza stone with a little bit of cornmeal. It not only helps to achieve a crispy crust, but it also makes it easy to get the pizza on and off of the work and cooking surfaces.
  • Chill dough – Refrigerate dough before baking, it is much easier to work with a cold dough than a room temperature one. 
  • Stretch, don’t roll your dough. You don’t have to toss it in the air like at a pizza parlor but use the stretching method. 
  • Rotate your pizza while cooking. All ovens have cool and hot spots, for best results, rotate at 180 degrees at least halfway through cooking.

Storage and Freezing

How to Store

If you find yourself with an extra slice or two, you can easily pop them in a ziploc bag or wrap them tightly with cling wrap and keep them in the fridge for 2-3 days.

Can I Freeze Peach Pizza?

Because of the water content of the peaches, as well as the arugula on top, I do not recommend freezing this pizza. It will thaw quite soggy.

  • Preheat the oven and the pizza stone (or pizza baking sheet) to 400°F.
  • Brush the extra virgin olive oil evenly over crust to create a barrier and prevent cheeses from sogging up the crust. Sprinkle the mozzarella, shallots and Gorgonzola evenly over crust. Top with the peach slices in whatever pattern or non-pattern you desire.
  • Bake at 400° for 11 minutes or until the crust browns and the cheese is bubbly.
  • Remove the pizza and immediately drizzle the balsamic reduction sauce evenly. Place a fresh arugula in the center of the pizza, slice and serve.
