What to Gather

  • Vanilla Frosting – This is the glue that holds everything together! Plus, it gives you that creamy texture that pairs perfectly with the crunchy graham crackers.
  • Green Food Coloring – A few drops of food coloring turn the frosting into pretty grass-like goodness.
  • Yellow Food Coloring – Because what’s a pot of gold without some golden shimmer, right?
  • Full-Size Graham Crackers – These are the sturdy base for all the toppings.
  • Mini Brownies (Brownie Bites) – Little fudgy brownies act as the pot for the brightly colored gold.
  • Rainbow Airhead Xtremes – These colorful strips act as the rainbow.
  • Mini Marshmallows – These are used to make the pillowy clouds at the base of the rainbow.
  • Sprinkles – Use these for even more sparkle!

Time to Make the Magic Happen

These pot of gold snacks come together quickly, so grab the kids (or don’t — your choice!) and get ready to whip up some edible gold!

  1. Tint the Frosting. Place the majority of the frosting in one bowl and the rest in another. Add green food coloring to one for grass and yellow food coloring to the other for gold.
  2. Prepare the Base. Lay out the graham crackers on the counter or a rimmed paper plate.
  3. Create the Grass. Spread or pipe the green frosting onto the graham crackers using a grass tip (Wilton #233) for a fun textured effect.
  4. Place the Pot. Set a mini brownie on one side of the graham cracker.
  5. Make the Gold. Pipe yellow frosting onto the top of the brownie using a round or star tip (Wilton #21) to mimic a pile of gold coins.
  6. Add the Rainbow. Use kitchen shears or a sharp knife to cut the Airhead Xtremes to about 3.5 inches, any more and it slacks. Press one of the ends into the gold and the other into the grass to create the rainbow arch.
  7. Finish with Clouds. Place mini marshmallows at the base of each rainbow for fluffy clouds.
  8. Decorate. Sprinkle on some extra sparkle for that final magical touch — use either glittery sprinkles or a sparkly icing.

Ingredients

  • 16 ounce vanilla frosting , more if you plan to pipe on the grass
  • green food coloring
  • yellow food coloring
  • 12 full size graham crackers
  • 12 mini brownies (Brownie Bites, 3 bags)
  • 1 4.5 ounce package rainbow Airhead Xtremes
  • 48 mini marshmallows
  • sprinkles , as desired

Instructions

  • Divide the frosting into two bowls, 2/3 of the into one bowl and mixed with green food coloring to make “grass” and 1/3 into a different bowl with yellow food coloring to make “gold”.
  • Place the graham cracker on a work surface, if working with kids, best to use a paper plate with a rim to catch any mess.
  • Either slather on or pipe on using a “grass” tip or Wilton tip #233 to make the grass.
  • Place a brownie muffin on one side. Using a round tip or star tip or Wilton tip #21, make the “gold”.
  • Cut 6 of the rainbow Airheads to 3.5 inches. Loop one half sticking it into the "gold and the other half into the "grass.
  • Surround the rainbow on the grass with 4 mini marshmallows.
  • Decorate using sparkle icing or other sprinkles.
